I’ve been searching for some quick and easy breakfast and snack ideas that are healthy, filled with protein and also delicious. I have always been a big fan of egg muffins. Breakfast is my favorite meal so I like to make time in the mornings to whip up something that will keep me full through the morning until lunchtime. I made a batch of these bacon and asparagus eggs muffins this past weekend and we have been eating them all week long. It definitely makes our morning routines much easier!
Paleo Egg Cupsย via A Healthy Life For Me
ingredients:ย
coconut oil or ghee for the pan
12 eggs
12 strips uncured bacon
8 asparagus spears or veggies of your choice
sea salt + black pepper
instructions:
preheat oven to 400ยบF. grease 12 cups of a regular muffin pan
lay a strip of bacon in each muffin cup, pushing down. It will over hang out side
crack an egg in each cup
distribute veggies evenly throughout each cup
season with salt and pepper and bake in middle oven rack for 15-17 minutes.
serve eggs warm
refrigerate for extras and rewarm.
